It would be nice to be able to record time spent on a task manually.
Starting and stopping the timer is at times not appropriate.

You can already do that.
You can manually add the start/stop OR you can insert the hours spent.

you can do that directly on the activity view:
fabbricabinaria.it/en/docs-en/tracktime/trackers#trackers-add
simply click on the calendar and then edit the start/stop time.
if you just want to record the hours, only edit the hours field, leaving the start/stop time empty
